high omega 3 night over here! dealing with some bursitis these days so trying to really get in my anti inflammatory fuel. Kale salad was massaged with EVOO/lemon dressing & topped with avocado, flax seeds & cashews. Roasted sweet potatoes on the side ofc, but the real show stopper was this perfectly cooked salmon! we seasoned it with “Ajika Georgian” seasoning blend from Trader Joe’s and it was *chefs kiss*!! Hope this inspired you to get some omega 3s in your dinners this week 😎

The perfect & easy pantry meal!! Traveling for work the rest of the week so didn’t have many groceries left. So this was a super quick and easy meal!
- lentil & brown rice spaghetti from @traderjoes
- canned tomatoes sautéed with onion, garlic, herbs & spices, plus some ricotta!
- threw in some frozen meatballs that I made last week
-paired with some red wine 🍷🍷

Took 15 min, easy clean up and saved $$ not getting takeout !! Try it next time you don’t know what to have for dinner!

Super excited to share everything with my friends like this delicious kale salad loaded with nutrients and ready to be eaten as a side salad OR as a main dish with an added protein!! Once I can figure out how to set up the dang website I’ll start sharing❕‼️

I had 1/2 loaf sourdough bread left, avocado, and a couple eggs in the fridge that I wanted to use up, so today we have an avocado toast! I would have loved to have tomato, cheese, or bacon added to this, but I didn’t have any. Point is, sometimes the minimum amount of ingredients is best!
—> sourdough coated with everything bagel seasoning in the skillet
—> avocado mash (avo, cilantro, lime juice, salt and pepper, red pepper flakes)
—> fried egg on top

70s & sun call for spring salad prep 🧡💜 I love throwing together a kale & cabbage salad (already dressed!) because it lasts for a few days & a great base for any meal. Here’s a few reasons why I LOVE it!
➡️ so many ways to add protein to this meal to make it complete!
➡️ add tomato, avocado, chickpeas, chicken, fish, tofu- whatever you want ( or have in your fridge!)
➡️you can make this a light snack in the middle of your work day OR make it a complete meal.
➡️lasts for a few days in the fridge and full of health benefits!

Monday night is cookie night when Tuesday is office day. Making a mess in the kitchen is always worth seeing my coworkers excited for baked goods. Made brown butter toffee cookies for the 2nd time but this time I used chocolate wafers like the recipe suggests instead of chocolate chips. I am also letting the dough sit in the fridge overnight for optimal flavor. I’ll be up early baking these so I am very excited for breakfast tomorrow!! #baking #bonappetit #toffee #brownbutter #briberybybaking

Cornbread muffins 🤩I am leaving for sunny Florida tomorrow, and after freezing all the raw materials I could in my fridge (veggies), I still had to use up buttermilk and eggs. Then I had half a jalapeño and a handful of blueberries. So I made some regular cornbread muffins & added jalapeños to some and blueberries to some. Chefs kiss, they’re delicious, easy to freeze, and future maggie already thanked me! @sallysbakeblog came in clutch once again ❤️

Breakfast for dinner? yes PUHLEASE!! Brought back the good ole zucchini quiche for dinner tonight (thanks again @kristensokoloski ) and paired it with a light salad with homemade honey balsamic & then some garlic knots from scratch. Of course the red wine was not forgotten as we are always looking for ways to get our antioxidants!! Bon Appetit 😋

Happy new year y’all! Anyone else ever go into crate and barrel “just to look” and then go back the next day and drop some $$ on “must have pillows” ?? I’m guilty as charged but I also came across this pasta sauce that I put to work tonight. I cooked spicy sausage with broccoli/cauliflower, onions garlic Rosemary and parsley. Before adding the pasta I added in the entire jar of this sauce. It’s a truffle tomato type sauce with a little kick so between that and the spicy sausage this is a real sinuses clearer! It’s a very unique flavor & if I had mushrooms that would have been even better. 10/10 recommend a trip to C&B for this stuff. #newyearsameme #carbs #crateandbarrel #truffe

my old roomies came to visit me so I whipped up something wholesome. I also love any excuse to set the table all pretty 🤩🤩 First off, had to use some leftover veggies before going back home this weekend so made a yummy soup (recipe coming soon) topped with some seasoned air fryer chickpeas 💗then made a kale salad with roasted sweet potato, zucchini and cabbage, maple sautéed walnuts, and topped off with a homemade cashew avocado creamy dressing (freaking delicious). Dessert was a pumpkin mousse because I had to use up the rest of the coconut cream. Could def use more sugar, that’s for sure, so we’ll try again next time. Fabulous time with my gals ❤️❤️❤️

My girl @adriiiallen is tying the dang knot in a couple months and what better way to celebrate than gather 15 of her closest gals to celebrate her!!? Of course I was most excited about the kitchen & couldn’t wait to force them to eat my food!! Alarm went off at 530am on Saturday and I started off by making 3 different quiche, some potatoes and pancakes to carbo load before our big day on the boat! Made some chicken salad, cold cut, and pb& j sandwiches for the boat, and swipe to see how @audreyallen1239 felt about dinner! Detox starts now am I right?!?!?

After a long weekend of sweets and late night pizza, my body was yelling at me for a salad and veggies! This is actually my first week actually cooking in my new apartment just for me, so I kept it simple. Roasted chicken drumsticks with eggplant, onions, garlic, and mushrooms (all topped with oil, s&p) @ 350 for 45 minutes and added it to a salad mix with tomAtoes, more onion and garlic (raw) and feta cheese. So filling & so yummy but eggplant could have probably used some more flavor... next time!!

thank you @joannagaines I love you!! took her Cajun one pan dish, added some kielbasa to make it a bit hearty, and it was a huge hit tonight! Dad is always a wild card but loved it so much he’s taking us out to ice cream 🍦11/10 recommend this dish. So easy & easy to clean up!

I had a whole menu planned for @jordan_herskowitz and my last week working from home together/sharing every meal together/spending too much money on coffee together (😭) but I always go back to a summer salad ☀️☀️☀️ @littleleaffarms lettuce to start, sliced onions, cucumbers, tomatoes, apple, avocado, hemp hearts & roasted chicken with @traderjoes everything bagel seasoning 🙌🏻 then I whipped up a quick dressing with olive oil, balsamic, mustard, honey and some S&P... time for dessert?
